I love me some Outback! You know what I mean! Outback is amazing! I don't think there are many steakhouses that can top Outback when it comes to steak. Ruth Chris steakhouse comes to mind, but I really don't have the money to eat there! With the tough economic times, I can barely afford to dine at Outback. Fortunately, I can still feel like I am eating at Outback by making Outback Steakhouse recipes at home. Here are my three top three Outback Steakhouse recipes you can make from home!

Outback Steakhouse Alice Springs Chicken

  • 4 boneless skinless chicken breasts, 1/2 " thick
  • Honey mustard
  • 6 slices bacon, sliced in half
  • 1/2 teaspoon McCormick's Season All
  • 1 cup sliced mushrooms, drained
  • 3 cups shredded colby or monterey jack cheese

Rub chicken breast with Seasonal All and set aside to marinate for 1 hour. While the breast is marinating fry bacon crisp and drain. Sauté chicken breasts on medium heat in pan with just enough oil to prevent sticking. Cook on both sides until a slight golden color and cooked in the middle but not dry. Remove from pan and place in a 9 x 13 dish. Spread chicken breast with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese. Bake at 350 degrees about 15 minutes or until cheese melts. Sprinkle with parsley and extra honey mustard may be served on the side.

Outback Steakhouse Bloomin' Onion
4 Vidalia or Texas Sweet Onions Batter:

  • 1/3 C. Cornstarch
  • 1 1/2 C. Flour
  • 2 tsp. Garlic -- minced
  • 2 tsp. Paprika
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 24 oz. Beer

Seasoned Flour:

  • 2 C. Flour
  • 4 tsp. Paprika
  • 2 tsp. Garlic powder
  • 1/2 tsp. Pepper
  • 1/4 tsp. Cayenne pepper

Mix cornstarch, flour, and seasonings until well blended. Add beer, mix well. Cut about 3/4" off top of onion and peel. Cut into onion 12 to 16 vertical wedges, but do not cut through bottom root end. Remove about 1" of petals from center of onion. Dip onion in seasoned flour and remove excess by shaking. Separate petals and dip in batter to coat thoroughly. Gently place in fryer basket and deep-fry at 375 to 400 1 1/2 minutes. Turn over, and fry an additional 1 1/2 minutes. Drain on paper towels. Place onion upright in shallow bowl and remove center core with circular cutter or apple corer. Serve hot with Creamy Chili Sauce.

Creamy Chili Sauce:

  • 1 pint Mayonnaise
  • 1 pint Sour cream
  • 1/2 C. Chili sauce
  • 1/2 tsp. Cayenne pepper

Outback Steakhouse-Style Steak
4 top sirloin steaks or rib eye steaks or filet steaks

seasoning :

  • 8 teaspoons salt
  • 4 teaspoons paprika
  • 2 teaspoons ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon coriander
  • 1/2 teaspoon turmeric

1. Mix together seasoning ingredients and rub into each side of steak.
2. Grill steaks on a large frying pan over medium-high heat; press down on steak with spatula or tongs to sear the edges.

Chicken is one of my favorite meats to cook. It is low in fat, high in protein, and if cooked correctly, it will definitely be a crowd pleaser. There are many different recipes for grilling and smoking chicken, and I have included my two favorite recipes below. I am known as The Smoker King, and I am the author and Webmaster of “Outdoor Cooking: Barbeque, Sauces, Mops, Rubs,” so you can bet that my favorite way to cook chicken is outdoors, on a grill or smoker.

The first recipe is one that I use when I cook chicken fajitas. The marinade gives a tequila-lime twist to the chicken, which is great for Mexican-type dishes. The second recipe is my take on the famous beer can chicken recipe. Through my experience, I have found that placing the chicken on a beer can throne while it is smoking produces a juicy, tender bird. Smoking chicken is one of my favorite ways to cook chicken, and after you have tried this recipe, I believe that you will really like

smoking chicken too.

Grilled Tequila Lime Chicken

Ingredients:

4-Chicken Breasts 2-Cups of Margarita Mix (I prefer Mr. and Mrs. T's) 1/2-Cup Vinegar 1/2 Cup Olive Oil 1-Tbsp Onion Powder 1-Tbsp Garlic Powder 1-Tbsp Cajun Seasoning Lemon Pepper

Option for a kicked up version: Add one shot of Tequila

Recipe:

1. Trim chicken breasts to remove fat 2. Using the flat side of a meat tenderizer, pound the each chicken breast until they are about 3/8 to 1/2 inch thick. 3. Mix all ingredients into a bowl just big enough to hold the chicken breasts while they are completely covered in the marinade. 4. Add chicken breasts, and refrigerate for 1/2 to 1 hour. The longer they stay in the marinade, the more Tequila lime taste they will have. 5. Season both sides of the chicken with Lemon Pepper before grilling. 6. Grill over medium heat for about 3-5 minutes per side. Times may vary depending on heat, just make sure that the meat is white throughout the breast,
and the juices run clear.

This is a great recipe for chicken fajitas.

Here is my recipe for Cajun smoked, beer-can chicken.

Injection Ingredients:

1. A 3 or 4 pound chicken 2. 1/2 cup melted butter (room temperature) 3. 2 tablespoons of Tony Chachere's seasoning (more for a spicier chicken) 4. 1-teaspoon garlic powder 5. 1/2 cup vinegar

Rub Ingredients:

1. Olive oil 2. Tony Chachere's seasoning.

Mop Ingredients:

1. Apple Cider 2. A Spray Bottle

Other:

1. A beer of your choice (1/2 full) 2. 3 cloves of garlic 3. About 3 tablespoons of chopped garlic

Directions:

1. Whisk all injection ingredients together. 2. Using a kitchen syringe, inject the liquid into various spots on the chicken. Try to be even as possible, injecting about 1/2 of the mixture into the breasts, and the other 1/2 throughout the rest of the chicken. 3. Rub the chicken down with olive oil, and apply an even layer of Tony's to the bird. 4. Drink half of the beer, widen the opening at the top of the can, then put the garlic and onion in the can. 5. Place the bird on the can. It should sit up by itself. 6. Preheat your smoker to about 250 F degrees. I use hickory for chicken, charcoal works well too. 7. Put the chicken on the smoker and spray the chicken with the apple cider about every 30 minutes. 8. Smoke the chicken for 3-4 hours, or until the internal temperature of the thickest meat reaches 180 F Degrees.

BBQ Chicken Sandwiches

This recipe is made with off the shelf ingredients. Use bottled barbecue sauce, a few seasonings and a rotisserie chicken to make this fast family dinner. You can purchase potato salad or coleslaw from the grocer also to round out the meal.

Ingredients

  • 1 bottle barbecue sauce
  • 1 tablespoon chopped fresh parsley
  • 1/2-teaspoon cumin
  • 1/2-teaspoon chili powder
  • 1 rotisserie chicken about 1-1/2 lbs.
  • Remove the skin and bones
  • 4 Kaiser rolls, split

Instructions:

  1. Combine barbecue sauce, parley, cumin and chili power in skillet over low heat
  2. Stir in chicken
  3. Stir occasionally until heated through
  4. Divide chicken mixture among the rolls
Serve with potato salad, coleslaw and pickles if desired.

Yield: 4 servings

Asian Stir-Fry with Rotisserie Chicken

Made with ramen noodles, fresh ginger, garlic and cilantro This is a quick dinner for busy cooks who want to create a delicious but nutritious 15-minute meal.

Ingredients:

  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 tablespoon minced and peeled fresh ginger
  • 1 clove garlic
  • 1 pkg. frozen mixed vegetables
  • 1/4-cup lite soy sauce
  • 1-1/2 teaspoon cornstarch
  • 2 pkgs. ramen noodles
  • 1 rotisserie chicken with skin removed and meat shredded
  • 1 tablespoon chopped fresh cilantro

Instructions:

In small bowl stir together soy sauce and cornstarch until smooth.
(Discard or save flavor packets from ramen noodle packages for another use)

  1. Heat olive oil over medium-high heat
  2. Add onion, ginger and garlic
  3. Cook until onion is tender
  4. Stir in vegetables
  5. Cook 3 minutes
  6. To the skillet add 2 cups water, bring to boil
  7. Stir in soy sauce mixture
  8. Boil until just thickened
  9. Stir in noodles and chicken
  10. Cook stirring occasionally until noodles are tender and chicken is heated through
  11. Transfer to platter
  12. Sprinkle with cilantro

Outback Restaurant has some of the best chicken entrees in the restaurant industry. I know what you are thinking. Isn't Outback a steak house? Well, it is a steakhouse, but Outback Restaurant Chicken recipes are just as good as their steaks. My wife is not a big steak person, so I can take her with me to Outback to order chicken. I order a steak, and she orders a chicken recipe. Recently I tried Outback chicken, and I was amazed at how great it was. Now I am trying all of their chicken recipes.

There are three entrees that I recommend. If you are not going to order steak at Outback, you MUST try the Alice Springs Chicken. This is one of the most popular items on the menu. The Alice Springs chicken is grilled and it includes bacon, sauteed mushrooms, Monterey Jack and Cheddar cheese smothered with honey mustard sauce. To top it off, you get a heaping serving of Outback mashed potatoes. You can not go wrong with this entree (unless you are on a diet!) Even if you are planning to order steak, you can order the appetizer version of this dish, the Alice Springs Chicken Quesadilla appetizer.

Outback has other chicken entrees if you want to watch the calories. Try the Chicken on the Barbie. This delicious recipe includes BBQ sauce instead of honey mustard and it includes veggies instead of mashed potatoes. If you love your BBQ sauce with chicken, then I personally recommend this entree. The grilled chicken will be served nice and juicy.

Lastly, I would like to recommend the classic Chicken Caesar salad. The Outback restaurant Caesar salad is NOT just another salad, and if you order this side item, you will see what I mean!

Outback is one of my favorite restaurants. Their steak is juicy and delicious, but their chicken recipe entrees are just as good. The next time you go down to the land down under, I recommend you try one of these entrees I have suggested!

Chicken is my nations most popular meat however when it comes to the barbecue it's probably less popular because people are more concerned to ensure that the meat is properly cooked. I've known some even to pre-cook chicken in the microwave first but this really isn't necessary if you follow the basic rules that I've set out before.

Just to re-iterate one point when using a charcoal barbecue grill, always give the coals time to settle before starting to cook (about 45 minutes) because despite chicken being described as a lean meat, the fat that is under the skin mobilizes very quickly and makes for serious flames. You don't get beautiful barbecue chicken with a crispy skin but raw chicken with what looks like an dirty oily coating, best described as a health hazard.

So when it comes to how to barbecue chicken there are essentially four different styles, rotisserie, spatchcock, smoker or roast, the fist two are the ones I'm going to concentrate on being specifically for the grill. Hopefully smoked chicken is self explanatory and roast chicken is great in a kamado ceramic BBQ but maybe that's for another day.

Rotisserie

Rotisserie is when you barbecue chicken on a spit roaster and rotate it over the heat so effectively grilling and continually turning to ensure that the chicken is cooked evenly all over. Rotisserie is probably the most difficult way to barbecue chicken because it's not so easy to tell when the chicken is done and it's important to ensure that the inner cavity is cooked. This means that it needs to be cooked well and for longer than if you were roasting the bird but that doesn't mean that it's going to be dry. The secret is to ensure that your barbecue chicken is basted every 15 minutes with the juices in the drip tray. Check for good cooking either by using a BBQ thermometer or simply stabbing the thigh with a skewer and when the juices run clear (no blood) then it's done. If using a barbecue thermometer then you're looking for a breast temp of 165°F and 180°F in the thigh and wing.

Spatchcock

This is my preferred way of how to barbecue chicken because it's relatively quick (about 45 - 50 minutes) and because the cavity is exposed, you're guaranteed to have the inside well cooked. The challenge is in the preparation because you've got to cut the chicken down either the backbone or the breast bone and this is best done with shears or a sharp knife. When using a knife I tend to cut the breast bone because it's easier. When you finished cutting, flatten the bird and place it in a BBQ basket and then you're ready for the grill, 25 minutes each side and then your done. TIP - less fat drips from the inside of the chicken so cook this side first.

Both the above are essentially grill techniques and to simply turn these into full blown barbecue chicken recipes then simply season with salt and pepper. This will add flavor but most importantly the salt will help crisp up the skin - not the most healthy part of the chicken but certainly tasty. If you then want to enhance the recipe then break out your favorite homemade barbecue sauce.

Here's simple Coke or Beer Can BBQ Chicken recipes you can make :

Ingredients:

  • 1 teaspoon dry mustard
  • 1 teaspoon granulated onion
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground black pepper
  • 1 whole chicken, 4 to 5 pounds
  • 2 teaspoons vegetable oil
  • 1 can (12 ounces) Coke or Beer

Instructions:

Combine all the above ingredients except the chicken, vegetable oil and coke or beer.
Remove and throw away the neck, giblets, and any extra fat off the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Spray with cooking spray or brush all over with the vegetable oil and season, inside and out, with the rub.

Open the Coke or Beer can and pour off about ⅓ of the Coke or Beer. Set the partially emptied can on a flat surface and place the chicken over the top so the can fits inside the cavity of the chicken. Move the chicken to the grill, keeping the can upright. Carefully balance the chicken over the Coke or Beer can. Grill over Indirect Medium heat until the juices run clear and the internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 1-1/4 to 1-1/2 hours. Either wear oven mitts or grab two oven pads, carefully remove the chicken and the can from the grill, and be careful not to spill the Coke or Beer because it will be hot and could burn you. Let the chicken rest for about 10 minutes before lifting it from the can. Discard the Coke or Beer. Cut the chicken up to your desire and right away.

Serves 4 to 6

Note: For a sweeter chicken use Coke.

BBQ Beer Chicken

Ingredients:

  • 2 tsp lemon pepper
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 tsp cayenne pepper
  • 2 tsp garlic salt

  • 1 can beer.

Directions: Mix seasoning together in a bowl and coat chicken halves. Let it sit in the refrigerator for 2 hours before grilling. Preheat the grill. Grill chicken for 15 minutes bone side down. Turn chicken and grill for 15 more minutes. Pop the beer can and spray enough mist without disrupting the flame. Thai BBQ Chicken Appetizers :

  • 3 lb Chicken wing drumbeats MARINADE
  • 1/4 c Coarsely chopped garlic
  • 1 bn Cilantro chop roots & lower stems, reserve leaves for garnish
  • 1 t Ground turmeric
  • 1 t Curry powder
  • 1 1/2 ts Ground dried chili’s (cayenne or equivalent)
  • 1 tb Sugar
  • 1/4 ts Salt
  • 3 tb Thai fish sauce Filipino or Vietnamese is ok, too
  • 1/2 c Coconut milk (canned is ok)
  • 1/2 ts Dried chili flakes OR cayenne
  • 2 Garlic cloves coarsely chopped
  • 1 tb Brown sugar
  • 1/4 ts Salt
  • 1/2 c Chinese red rice vinegar
  • 1 Green onion -- thinly sliced
  • 1 tb Coarsely chopped cilantro (leaves)

Preparation: Process all marinade ingredients in a blender until smooth. Marinate chicken, refrigerated, overnight. Grill over hot coals until done, brushing frequently with coconut milk. Serve garnished with cilantro sprigs, accompanied by steamed rice and bowls of dipping sauce.

DIPPING SAUCE: First 4 ingredients to a paste with mortar and pestle, then dissolve in vinegar. Alternatively, put it all in a blender and blend until smooth. Float the green onions and cilantro on top.

Just three little things to remember and your food will surprise everyone. One of the most versatile foods in the entire world is chicken. This fine feathered friend of ours has been prepared thousands of ways over hundreds of years. One of America's favorite ways to eat chicken is barbequed. It's so simple and delicious, yet people tend to get the formula wrong and their chicken comes out tasting like rubber smothered in ketchup.

The first thing people do wrong is overcook the chicken. They leave the poor little pieces of chicken on the grill for hours until there's nothing left but dehydrated meat and bone. You want to cook your chicken only to 170 degrees, never more. The idea is to let the chicken rest. Carryover heat will increase the temperature to 180 degrees, the safe point at which you can eat chicken. Chicken will remain juicy as long as it's not overcooked. Don't worry about drying it out. As long as it cook it the proper length of time, it will be just fine.

Ultimate BBQ Chicken:

This BBQ chicken recipe is really simple and super delicious. The first thing we'll want to do is to go shopping. I personally like chicken thighs for this recipe, but you can choose what you wish. Make sure to grab a bottle of your favorite BBQ sauce. The trick here is in the seasoning, we won't need to make a fancy sauce for these. The seasoning consists of salt and pepper, garlic powder, onion powder, paprika, rep pepper, and some old bay seasoning. Whatever you don't have already, pick some up.

We want to start the night before you grill and begin to season the chicken. We'll need to make a quick spice rub. To do this, take two tablespoons of salt and black pepper, 1 tablespoon of garlic powder, onion powder, paprika and old bay, and a ½ teaspoon of red pepper. Combine all these ingredients in a bag or a container, and that's it. Wash the chicken pieces and let dry thoroughly. After they're completely dry, rub the chicken liberally with the seasoning. Wrap your chicken in foil or plastic wrap, place in a leak-proof container, and let it sit overnight. Be careful to never cross contaminate when dealing with raw poultry.

On the day you're ready to grill, cut your burners on medium heat. After your grill heats up, oil the racks well and place your chicken pieces skin side down. Once they start to cook, close the lid. Check on them every 5 minutes or so to make sure they're not burning. All together, we want to give them 15 minutes on the skin side. After that, turn over and repeat the checking and waiting process. Let them go for another 15 minutes and them begin to sauce your chicken.

Saucing is the last step. Make sure you keep a close eye on your chicken, the BBQ sauce will burn quickly due to its high sugar content. After you finish saucing one side of the chicken and turning it over, the pieces should be ready to turn back over after saucing the opposite side. They should only take about 3 minutes on each side to cook the sauce on. Be careful taking the chicken pieces off of the grill. This recipe is really simple. It's all in the seasoning. These seasonings play very well with chicken, especially BBQ. The paprika has a nice, deep smoky taste. This recipe will be a hit with even the toughest crowds.

Great barbecued chicken, with moist, tender succulent meat and sticky smoky skin, is made by cooking over low heat using a grill. You can get a great depth of flavour by using a spicy barbeque rub on the chicken before grilling. Salt and pepper can also be used in the same way. Salt will aid in keeping the moisture in the chicken while grilling and pepper will add to the aroma and bite.

Preparing the charcoal

A grilling temperature between 230° and 250°F, is optimal, to achieve this, stack charcoal in a pile in the centre of grill. Douse with lighter fluid and let it soak in. Light and leave it alone until grey ash has covered all visible charcoal. Spread out charcoal into an even layer and when it has an even layer of ash approximately 1/2 the depth of a charcoal briquette you are ready to grill. The actual grill should be at about 4 or 5 inches above the coals.

Cooking

Slowly cook the chicken until internal temperature is approximately 170 degrees and then add a BBQ sauce of your choice. Cook for another 5 minutes to allow the sauce to stick to the chicken and then remove from the heat.

BBQ Chicken Recipe

Now, here's a great little recipe for "Honey BBQ Chicken", which you don't need to cook on the BBQ; it's especially great for those wintery days of the year to remind you of summer!

Ingredients:

  • Chicken wings
  • Seasoned salt
  • Adobo
  • Garlic salt
  • Garlic powder
  • Honey
  • BBQ sauce
  • Oil
  • Salt and flour
  • Grated Almonds

Put the oil in the frying pan and turn the stove to medium heat while you season your chicken.

Put a little bit of salt all over the chicken and let it stand for about 10 minutes; the salt opens the holes in the skin of the chicken and will allow the other seasonings to permeate.

Sprinkle enough, but not too much, of each listed seasoning over the chicken.

Put some flour inside a medium sized bowl and add a little bit of each of the seasonings (also sprinkle with some grated almonds). Make sure that there is enough flour in the bowl to coat all the chicken pieces.

Check to make sure that the oil in the frying pan is hot and dip your chicken into the flour, covering it all over, then transfer it into the frying pan.

Let the chicken cook in the oil until it is golden brown all over, then poke a fork through the chicken to see if it's cooked, there shouldn't be any pink coloured meat and the juices should run clear.

Mix the BBQ sauce and honey together in a medium-sized bowl.

Preheat the oven. Take the chicken out of the pan and put it into the Honey BBQ sauce, then put it in the oven on a baking pan for about 6-8 minutes. Then serve.

Hey there. So I bet your trying to find the best recipe for bbq chicken. Well let me help you conquered this quest, and give you a few pointers, tips, and a great recipe that chefs around the world have been keeping a secret. There are only a few steps and secrets to making the best bbq sauce, and it is not only delicious but its fun and easy. The first step is the sauce :

  • Yield 1/2 qt (1.5 lt)
  • 1 onion small dice
  • 3 cloves garlic pealed and minced
  • 1 oz veggie oil
  • 1 oz red wine vinegar
  • ½ oz chicken stock
  • 1 oz brown sugar
  • ¼ oz honey
  • 1 oz dry mustard
  • 1 can plum tomatoes
  • Salt and pepper to taste
  • 1 tbs cayenne pepper

Step 1: Ok so the first thing you want to do is sweat the onions and garlic in the oil (to sweat means translucent or change cooler) for about 5 min.

Step 2. Add your red wine and chicken stock and reduce by half

Step 3. Add the rest of the ingredients and cook for 45 minutes on medium heat. After the 45 minutes take the pan off the heat and with a hand blender blend the sauce, this helps to break up and blend the plum tomatoes. Add salt and pepper to taste. And whammy!!! There's your home made award winning sauce.

Okay now for your chicken, it is all up to you, I personally like to get chicken wings.

First pre heat your oven at 450 for 10 minutes. After the ten minutes cook the chicken in the oven with oil salt and pepper for 20 minutes, then take the chicken out of the oven. And let rest for 5 minutes (note the chicken is not fully cooked at this step, I am doing this method to crisp up the skin,) now turn down the oven to 300, and place your chicken back into the oven and cook for approximately 45 minutes.

This technique is called flash cooking, or shock cooking. The first step of shock cooking is to extract the fluids and liquids very fast from the out side skin so it crisps up. And the second step of shock cooking is to slowly cook the meat to help keep the meat nice and juicy and tender. So when you're finally done cooking you have a nice piece of chicken that has a crispy out side skin but a nice juicy tender meat on the inside.
